Pork with Prunes and Mustard

Ingredients

small knob of butter
1 tablespoon olive oil
1 pork fillet, cut into thick discs 1 small onion, chopped
1 clove garlic, chopped 250m1 apple juice
1 chicken stock cube
6 Sunsweet Prunes, chopped
2 teaspoons grainy mustard
2 tablespoons crème fraiche

Instructions

  1. Heat the butter and oil in a frying pan and fry the pork fillet for about 5 minutes, turning once during cooking until cooked through. Lift out on to a plate and set aside.
  2. Add the onion and garlic to the juices in the pan and cook for about 5 minutes until the onion is softened and golden. Add the apple juice, stock cube and prunes.
  3. Stir and simmer until reduced by half.
  4. Add the mustard and crème fraiche to the pan and stir until blended. Return the pork to the pan and cook for a few moments until heated through. Season to taste.
  5. Serve with roasted garlic potatoes and broccoli.
