Cheese Mini Prune Quiche
Ingredients100g pitted SUNSWEET prunes\r
4 quiche pastry shells\r
2 tablespoons of grated parmesan cheese\r
250g ricotta cheese\r
3-4 leaves of verbena\r
2 tablespoons of lemon juice\r
salt, pepper and chilli powder
- Bake pastry shells until golden at a medium temperature on a greased baking sheet.
- In a mixing bowl combine ricotta, grated parmesan cheese, herbs, seasonings and diced prunes.
- Cool pastry shells then fill with the mixture. Decorate the quiche with thinly sliced avocado and slivered almonds.
- Give a squeeze of lemon and garnish with remaining herbs.
This is a terrific snack at home or on the go.
