Ingredients:
- 40g unsalted butter, melted
- 4 sheets filo pastry
- 30ml olive oil
- 150g minced lamb
- 1 onion finely chopped
- 50g feta cheese
- 100g SUNSWEET prunes, roughly chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 tablespoons mint, freshly chopped

Method:
1. Preheat the oven to 185ÂșC.
2. Heat the oil in a frying pan, add the minced lamb and cook for 8-10 minutes, until golden.
3. Add the onion, spices, mint, prunes and cook for 2 minutes.
4. Place in a bowl and leave to cool.
Once cool, add the feta and mix well.
Filo:
1. Cut each filo sheet into four 15cmx10cm rectangles.
2. Pile them on top of each other and cover with a damp cloth.
3. Take one sheet and brush liberally with melted butter.
4. Spoon a good helping on to one end of the strip and roll up like a spring roll.
5. Turn the sides in to secure the filling.
6. Repeat steps 3-5 with the remaining 15 strips.
7. Place on a greased baking tray and bake for 10-12 minutes, until crisp and golden.
Great party food, pastries best served hot.
