Vegetarian Sushi

 

Ingredients:
  • 150g pitted SUNSWEET prunes
  • 300g sushi rice
  • 200g smoked salmon
  • 4 sheets of nori seaweed
  • 1 cucumber
  • sesame seeds
Method:
1. Lay sheet of seaweed flat, spread steamed sushi rice from the middle to corner.

2. Place a slice of salmon, cucumber and sliced giant prunes on top of the rice.

3. Dampen seaweed so that it sticks and bring one side over the other creating a cone shape.

4. Prepare small rice balls and decorate with pieces of prune. Fill pitted prunes with rice, smoked salmon and cucumber.

5. Garnish all with sesame seeds and serve.
