Potassium Sorbate
Potasium Sorbate is a preservative with a long established use in foods to prevent the growth of moulds and yeasts. In health terms it is considered safe and has the lowest allergenic potential of all food preservatives. It is typically used in 250-1000 parts per million. In the prune industry, Sorbate application is monitored by the Dried Fruit Association (DFA) and its usage level is closely monitored. If it is used it will always be an ingredient on the packaging label.
